Directions: Put together diced tomato, avocado and chopped parsley. Squeeze the juice from one lemon into a bowl. Add minced garlic to the lemon juice along with olive oil & salt. Finally, add the cooled boiled quinoa to diced vegetables and the lemon dressing. Mix it well. Top with pumpkin seeds and serve!
DIRECTIONS:In a large bowl, combine all ingredients and mix it well in one direction. Heat a large pan on a low medium flame. Add some butter or coconut oil. After the paste is ready, mould it into the shape of pancakes and place it on the pan. Let it cook for 1-2 minutes till it turns goldenish brown. After that, turn it the other side and cook it again for 1-2 minutes.Once ready to eat, garnish it with honey or maple syrup and blueberries to add to its sweet taste.
FOR THE BASE:
3/4 cup Quinoa Uncooked, 1/4 cup Water, 2 tbsp Olive Oil, 1/2 tsp Baking Powder, Pinch of salt
12 Slices - Pepperoni or sliced sausages, 1/2 cup Tomato sauce or pizza sauce, 1/2 cup Cheese, shredded.
Soak uncooked quinoa for 6-8 hours in normal water or 2 hours in hot water. Preheat the oven to 220 Celcius. Spray some baking spray over muffin tin or line it with parchment paper.
Rinse the quinoa properly and add it to the blender. Add all the crust ingredients in the blender. Blend until smooth and creamy. Pour batter into each muffin tin and bake for 10 minutes or till softly brown. Remove the pan and flip the crust, to cook the other side. Return it to the oven and cook till the corners turn brownish. Remove from the oven and top each crust with 1 teaspoon of sauce, pepperoni or any other topping used and cheese. Garnish with herbs and add more cheese if required.
